Modification of Maize Protein by Twin-screw Extruder

By using the BC45 type twin screw extruder machine, we can study the corn protein modification of extrusion. Through the analysis of water-soluble protein, and with the fast screw speed, the moisture of materials is lower, the lower temperature of popping, the shorter length of rotary die head , it will be in favor of obtaining high NSI corn protein. After extrusion processing, protein can greatly improve the properties of the functional index, meanwhile the products’ color and smell will be improved, and the digestion efficiency will increase as well.
